Four generations. One family. A whole lot of Louisiana on the table.
It started in 1971 when the Metcalf family opened a restaurant in Lafayette with nothing but a kitchen and a feel for what people actually want to eat. That feel got passed down. Not a recipe book, not a franchise plan. Just an understanding of flavor that you can't fake and can't rush, carried from one generation to the next for over fifty years.
Somewhere in all those years, one thing kept showing up on the table that people couldn't stop asking about. Cane syrup and red jalapeños, worked into dishes until it wasn't a secret anymore. Customers wanted a bottle to take home.
That's this sauce. Four generations of knowing what tastes good, bottled up and handed to you.
